Spicy Peanut Chicken and Rice recipe
SPICY PEANUT CHICKEN & RICE Skillet dish
- 1 cup converted rice, cooked according to package
directions but omitting salt
- ½ cup diced red bell pepper
- 3 cloves garlic, minced
- 2 teaspoons peanut or vegetable oil
- 1 cup diced cooked chicken or turkey (use vegetarian substitute if desired)
- ¾ cup chicken or vegetable broth
- ½ cup peanut butter
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon finely shredded fresh ginger
- 1 teaspoon ground coriander (optional)
- 1/8 teaspoon cayenne pepper
- ½ cup sliced green onions with tops
- ¼ cup coarsely chopped peanuts
- ¼ cup short thin red bell pepper strips
- After rice has been removed from heat, cook red pepper and garlic in
oil in a large skillet for 2 minutes.
- Add remaining ingredients except rice, green onions, peanuts and pepper
strips. Stir constantly over medium heat until peanut butter has melted.
- Stir in green onions and hot cooked rice. Garnish with peanut
and pepper strips Makes five to six servings.
